Slimmers Prawn Dhansak (with butternut squash)

Ingredients
600g King Prawns
1 onion
3 cloves of garlic
1tbs grated root ginger
250g butternut squash (cubed)
1 tbs ground ginger
1/2 tbs ground coriander
1/2 tbs chilli powder
1/2 tbs of turmeric
2 cardamom pods, bashed
4 cloves
piece of cinnamon bark
3 tbs tomato paste
1/2 cup chopped tomatoes
1/2 cup red lentils (drained)
2 green chilli’s (sliced half lengthways)
480ml water
1 tsp salt
cooking oil spray
Cooking method
Heat large saucepan over medium heat and spray with oil
Add the onion to a food processor and pulse the blade a couple of times to finely chop
Fry the onions for a couple of mins until translucent
Add butternut squash, garlic, ginger to foot processor until finely chopped
Add this to the onion and spray with oil. Cook until soft
Add the spices, tomato paste, tomatoes and cook for a couple of minutes
Add the lentils, Green chillis, water and salt. Bring to boil and simmer for one hour.
Add more water if it becomes too dry
Add prawns and cook for another 2-3 mins until the prawns are cooked.
Add some chopped corriander
