Pat the chicken dry with paper towels.

Place the chicken in a bowl with the garlic granules, onion granules, ground ginger, salt and white pepper and cornflour and toss to coat.

Preheat the air fryer to 200°C/400°F for 2 minutes.

Line the air fryer basket with non-stick baking paper or use the grill pan insert. Spray with olive oil spray. Add the chicken pieces and space as far apart as you can. Spray over the top with more olive oil spray.

Air-fry for 15 minutes, turning after 10 minutes and removing the baking paper, if using (this will ensure the chicken goes really crispy). Remove the chicken and set aside in a small ovenproof dish.

Add the onion, (bell) peppers and sugar snap peas, spray with oil and air-fry for 5–6 minutes until tender. Shake the basket halfway through cooking.

Place all the sauce ingredients in a microwave-proof bowl along with 4 tablespoons water and microwave at 30-second intervals, stirring after each 30 seconds until thickened (this will probably take 2 minutes in total). Alternatively, heat the sauce in a small saucepan.

Pour the sauce over the chicken and toss to coat.

Add the chicken back in the air fryer for a minute or two, just to rewarm. Sprinkle with the chopped spring onion and a pinch of sesame seeds. Serve with the vegetables.
